Štajerska is a farming region of rolling hills towards the North East of Slovenia. Here we meet Janja and Matjan. Together with Matjan’s brother Mitja they have created a small native breed pig farm where they outdoor-rear the Slovenian indigenous Krškopolje - black belted - pig. This pork is a big deal in Slovenia. Matjan makes wonderful salami whilst Janja makes traditional ocvirki, rendered pork fat (lard) with the crisp rendered fat left in the fat. This salami (445g) with pumpkin seeds is a wonderful delicious treat.
